We are in the pure Maple Syrup business in Northern, Lewis County, New York State and make maple syrup the old fashion way with buckets and horses to collect and gather the sap.

April 10, 2008:
Wow, it's been a busy few days! Now the weather is warming up so that doesn't help us. It slows down the sap. We are hoping it will cool off enough that the sap will run some more.
March 31, 2008:
The crew went out to check and see if there is any sap to gather. Most of it is still frozen but we are hoping with the warmer temps that we will be gathering and boiling this week.
March 28, 2008:
Finally we have some sap that wasn't so frozen. We were able to get quite a few containers filled. Today we plan to gather, boil and can some more! It's Spring but there is still snow on the ground.
March 22, 2008:
Well Friday we tried to boil but ended up being short on sap so we didn't get any syrup. It's been too cold here and the sap is frozen in the buckets. We prob will continue to try to gather on Monday or Tuesday.
It's a lot of work and quite a process to make Maple syrup but it sure is worth it, yum!

March 20, 2008:
We are currently busy scattering buckets, gathering sap and hope to boil soon!

UPDATE: A great start to the season! We were able to boil and make 15 gallons!


Do you know how many gallons of sap it takes to make one gallon of syrup????

Are you sitting down? It takes about 40 gallons of sap to equal 1 gallon of syrup. Wow!!

Did you also know that the store bought maple syrup only has 2% or less of real maple? Probably less if any at all.
